DEARBORN — The Henry Ford College Culinary Arts Department will hold its Courses IX: Student Scholarship Dinner at 6 p.m. Nov. 6, at Fifty-One O One – HFC’s student-run restaurant, in the Student & Culinary Arts Center on the main campus, 5101 Evergreen.
The cost to attend this dinner is $45 per person, $30 of which is a tax deductible donation to the HFC Hospitality Scholarship Fund.
The seven-course semi-annual dinner features a variety of game prepared with seasonal ingredients. At this dinner, some of the cuisine offered includes: spice-crusted loin of venison and venison dumpling with chana masala (chickpeas, tomato, sweet potato and onion), slow-roasted lardo-blanketed sockeye salmon, cinnamon-roasted duck breast salad with a peach vinaigrette and caramelized peaches.
There will be an assortment of house-made breads and hors d’oeuvres, including pate, canapés and bites. White chocolate yuzu mousse, passion fruit cream and coconut Dacquoise and macadamia nut crunch will be served for dessert.
Coffee and tea service included. Beer and wine will be available for purchase. Wine is available for purchase by the glass ($4) or by the bottle (between $16.25 and $22.50). Valid identification is required purchase alcohol.
“The menu is designed to feature products raised or grown in their native environment and offered at their seasonal peak,” said Joseph E. Cosenza, HFCC culinary arts instructor and chef de cuisine.
